You will Need...........
and for decoration......
- 200g (1 1/2 cups) of plain (all purpose) flour
- 30g (2 tablespoons) ground rice
- 75g (1/2 cup) caster sugar
- 125g (2/3 cup) butter
- 1 small egg
- an Adult
What to do next............
- 225g (2 cups) icing (confection's) sugar
- 3 tablespoons hot water
- food colour
- any sweets that you think might make good "Parts" of the face (eg. Smarties, M&Ms, red and green 'liquorice' shoe laces, liquorice strips, red glace cherries, chocolate vermicelli, coloured sugar strands, crunch nut topping, chocolate drops or buttons, etc.).
Sift the flour into a large mixing bowl and stir in the ground rice & caster sugar.
Cut the butter into small pieces, then add to the bowl. Rub the butter into the flour using your fingers tips until the mixture resembles breadcrumbs.
Break the egg into a cup, and beat lightly with a fork. Tip the egg into the mixture, and mix it in. Knead the "Dough" until it forms one big smooth lump.
Wrap the dough in cling film and put it in a fridge for 20 minutes. This will make it easier to roll out.
Turn on the oven to 180°C/350°F/Gas Mark 4 and grease a large baking sheet with a little margarine or butter.
When firm, roll out the dough on a lightly floured surface until it is about 5mm thick.
Stamp out circles using a round biscuit (cookie) cutter and place on a baking sheet.
Gather up the left-over dough and knead it together, roll out again stamp out more circles. repeat until all the dough is used up.
Bake in the oven for 12 minutes, until golden brown. Remove from the oven and leave to harden for 5 minutes. Then transfer the biscuits to a wire rack to cool.
Time to decorate your biscuits..............
Sift the icing sugar into a bowl, and add the hot water. Mix until all the lumps have gone and the mixture is smooth. Divide the icing into 3 portions, in three different cups, colouring each one a different colour with a few drops of food colour. Mix each cup of icing until the colour is even. you can leave one of the cups white.
Place a teaspoonful of the icing onto a biscuit and spead it using the back of a spoon. If the icing is too stiff add a drop of water to the icing in the cup, if it is too runny, add some more icing sugar.
Now decorate the biscuits before the icing dries, using the sweets and toppings, as eyes, mouths, nose and hair.
Tip! You can use the dough to make any other biscuits shapes you want- how about egg shaped biscuits for Easter, Skull shaped Cookies for Halloween....!!!!
