Toffee Apple Muffins

Toffee Apple Muffins are great for Bonfire Night, Halloween - or any other time for that matter!

What you need: 2 medium mixing bowls. a sieve, measuring jug, wooden spoon, sharp knife, small microwave proof bowl (or small saucepan), small plate, chopping board, bun tin, 12 paper cases, dessert spoon.



1. Make sure the shelf is in the middle of the oven and set the oven to 200C/400F Gas Mark 6 2. Place the paper cases into the bun tray 3. Sieve the flour and baking powder into one of the bowls 4. If you have a microwave oven, place the butter in the small dish and melt on high for approx 30 seconds. If you do not have a microwave oven, place the butter in a small saucepan and melt over a gentle heat. Allow to cool

5. Cut the apple into quarters. Peel, core and chop into small pieces. Put the apple pieces on to a plate 6. Chop the fudge into small pieces. Place on the plate with the chopped apple.

7. Into the other mixing bowl put the demerara sugar, the melted butter and the milk. Add the egg and beat the mixture with the wooden spoon. 8. Add the sieved flour and baking powder. Mix together very quickly with the wooden spoon until the flour dissapears but the mixture should still be lumpy. 9. Add the chopped apple and fudge and stir into the mixture. 10. Spoon the mixture into the 12 bun cases. (They should be quite full.) Place on the middle shelf in the pre-heated oven and bake for about 25 minutes until golden brown. 11. Remove the tray from the oven but leave the buns in the tin until they are quite cool as the fudge wil be VERY HOT. Then you can tuck in and enjoy these Autumnal treats.
