Pink Sugar Shortbread is Botham's own recipe Scotch Bread - a delicious shortbread enriched with butter and egg to give a softer texture. Topped with pink sugar it makes the perfect accompaniment to a cup of tea, but it does come with a warning... It is particularly moreish!

Pink Sugar Shortbread always reminds us of Elizabeth Botham's daughter-in-law Violet who worked alongside her in the bakery. She was particularly good at pastry making and always enjoyed Pink Sugar Shortbread on her breaks. Neville Botham carried on the baking tradition and started work at 5.30 in the morning having enjoyed an early morning tea and Scotch Bread before walking to the bakery.
